
We love roasting potatoes, in fact, we'd argue it is the best way to prepare them... charred, crispy edges, and they are delicious.
Ingredients:

1 lbs baby potatoes

2 tablespoons extra virgin olive oil

Kosher salt, to taste

2 tablespoons Lentl Peppercorn seasoning
High Protein Sauce :

150 g silken Tofu
-
1/4 cup walnuts
- 1tsp miso paste
- 2-3 tsp lime juice
-
1 garlic
- 1/4 cup cilantro
- 1/4 tsp pepper
Directions:

Preheat the oven to 400 degrees Fahrenheit.

Cut potatoes in half.

Mix oil and Lentl - Peppercorn seasoning to coat all the potatoes well.

Bake @ 420F for 30-40mins.
High Protein Sauce :

ADD all ingredients to a blender and blend until combined.

TASTE and add more salt, pepper, or lime juice as desired.

STORE in a covered container in the fridge for up to 5 days.
